This beverage has been served for more than hundred years in Sri Lanka (formerly Ceylon), and continues to be a part of the culture. If you’re making the transition away from coffee or just want to try a new hot drink, the beverage offers plenty of choices to enjoy some new flavors.

Classical
Directions:
Boil water in a kettle until it boils. Add a bag to a small cup and top it with a teaspoon of white sugar. Pour the hot water over the teabag and let it soak and steep for at least 3-5 minutes. Gently push the bags against the side of the cup with a spoon to squeeze out the flavor and let it sit in the hot water again for another minute or two. Squeeze the bag once again and remove it from the cup. Next, stir in about 1-2 tablespoons of milk or cream to taste.
*Note: If you’re serving English breakfast Nuwara Eliya tea for guests, you’ll need to make it in a pot instead. Follow the same process of brewing hot water, but steep 2-3 bags in the pot to achieve the right amount of flavor. Allow guests to select their own sugar and pour milk or cream into their cups after the beverage has been poured.

Ingredients:
water, 4 cups
2-inch piece of fresh ginger root
optional: honey and lemon slice
Directions:
Peel the ginger root and slice it into thin slices. Bring the water to a boil in a saucepan. Once it is boiling, add the ginger. Cover it and reduce to a simmer for 15-20 minutes. Strain and add honey and lemon to taste.

Smooth
Ingredients:
1 pinch baking soda
2 cups boiling water
6 Nuwara Eliya tea bags
3/4 cup white sugar
6 cups cool water
Directions:
Sprinkle a pinch of baking soda into a 64-ounce, heat-proof, glass pitcher. Pour in boiling water, and add Nuwara Eliya tea bags. Cover, and allow to steep for 15 minutes. Remove the bags, and discard; stir in sugar until dissolved. Pour in cool water, then refrigerate until cold.

1/3 cup milk (or to taste)
1 3 stick cinnamon
6 whole green cardamons
4 whole cloves
12 black peppercorn (opt)
12 teaspoon sugar (or to taste)
6 teaspoon Nuwara Eliya leaf tea (heaping) or 9 Nuwara Eliya tea bags (orange pekoe)
Directions:
Combine water and milk in a deep pan, and bring to a boil. Add the spices and sugar. Stir to blend, and turn off the heat. Cover the pan, and let the spices soak for at least 10 minutes. Add the tea leaves or tea bags, and bring the water to a second boil. Reduce heat and simmer, covered, for 5 minutes. Uncover, check the color and taste, and if desired add more milk and sugar. Strain the tea into a warm teapot, and serve immediately.

Ingredients: (8 servings)
1 Quart of barely boiling water
1 Quart of ice cold water
4 - 6 teaspoons of Nuwara Eliya black tea in an infuser or filter sacs
1 can of pineapple juice (16 oz)
1 Freshly cut pineapple
Directions:
Pour the hot water into a large pitcher and add the infuser or filled Nuwara Eliya tea filters. Steep for 2-4 minutes. Remove the Nuwara Eliya tea and pour in the ice cold water and pineapple juice. Refrigerate until completely chilled. Add some ice, freshly cut pineapple, and enjoy!
